REEF: Executive Production Chef


This is a Full-time position in Ottawa, ON posted February 6, 2021.

Who You’ll Work ForREEF’s mission is to connect the world to your block.We transform underutilized urban spaces into neighborhood hubs that connect people to locally curated goods, services, and experiences.With an ecosystem of 4,500 locations and a team of 15,000 people, REEF is the largest operator of mobility, logistics hubs, and neighborhood kitchens in North America.Together we are leveraging the power of proximity to keep our communities moving forward in a sustainable and thoughtful way.What You’ll Do Supervise production kitchen team and establish a culture of respect, hard work, consistency, and effective communication Estimate food requirements and controls serving portions, eliminates waste and leftovers Prepare all food efficiently, in enough quantities in compliance with Reef Kitchen policy Assure all Production is ready for next day, and all jobs are organized together, both hot and cold, and clearly marked.

Ensure kitchen staff follow all recipes & portion servings correctly & according to menu specifications.

Monitor taste and quality control of all food production.

Utilize company production planning tools and resources to ensure facility accountability for production scheduling.

Determines all cost of food service operation, prepares recommendations for ensuing budget year, work within the current budgetary guidelines and maintains control over expenditures.

Manages and maintains to the highest level the health, sanitation, and safety regulations pertaining to the handling and storage of foods and the operation of food processing facilities and equipment.

Complies with all state and federal Health and Safety codes.

What We Want From You 3-4 years of supervisory experience in a food production/manufacturing environment.

Culinary degree Must have sound knowledge of principles of cost accounting, record keeping, and budget planning and purchasing procedures.

Excellent understanding of various cooking methods, ingredients, equipment and procedures Prior experience as a supervisor overseeing and directing a large staff.
